D-Allulose is a rare monosaccharide with sweetness approximately 70% of sucrose but producing almost no calories. It exhibits various physiological activities such as blood sugar regulation and antioxidant effects, and is widely used in functional foods, health products, and specialized formulas for diabetic patients. Due to its structural similarity to common monosaccharides like D-glucose and D-fructose, traditional detection methods such as UV detection face challenges due to its lack of conjugated double bonds and UV absorption; while derivatization-based detection methods are cumbersome and have poor reproducibility.
